Here is the last recipe (for now) of the freezer meals series I’ve been posting. I will hopefully get a few more posted in the not-so-far future.
For all you Trim Healthy Mama-ers out there, this is a great recipe for making now or freezing for later. I modified this one a bit (multiplied it x7), so it’s bigger than the original recipe, but it’s pretty simple if you want to break it down to a smaller, one-time, eat-right-now meal.
What you’ll need:
2 (28 oz.) cans diced tomatoes
6 cups water or chicken broth
1 3/4 cup heavy cream or half & half
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. cayenne (optional)
Pour diced tomatoes into large pot (puree before using if they are too chunky); add water or broth and cream. Season with (optional: THM Sweet Blend or THM Pure Stevia Extract powder and) salt, pepper, and cayenne (optional).
Heat through and freeze. Makes about 4-5 quart-sized bags.
When serving, top soup with grated cheese if desired. This goes great with cheese quesadillas (also “S”) that I will be sharing a recipe for next!
