Tasty Tuesday: Butternut Squash Casserole

Good morning! I apologize for not having posted any new recipes the past two weeks. I’ll try to get better at keeping up (again). 
So. Today’s recipe is so easy and simply delicious! If you like sweet potato casserole (or sweet potato anything) you’ll like this, because it tastes very similar. 
What you’ll need:

  • 3 cups butternut squash
  • 1 cup sugar
  • 3 eggs
  • Pinch of salt
  • 1 1/2 cup milk
  • 2 tablespoons plain flour
  • 1/4 cup butter, melted

Preheat oven to 425 degrees. Mix these ingredients together in a bowl; spread into 9″ x 13″ pan and bake for 40-45 minutes or until firm. 

  • 1/2 cup butter, melted
  • Half package (about 12 ounces) vanilla wafers, crushed 
  • 1 cup brown sugar

Mix these ingredients together and spread on top of casserole. Put back into oven and bake unit topping is browned a little. 
Serve warm and enjoy!
