Tasty Tuesday: Banana Oat Bread

Good morning! Today I’m sharing a recipe I recently tried out and instead of using nuts (since I was out) I used dried oats. My bananas had just about seen their last days so I had to get them made into something before they went to waste. So here is banana oat bread.

1/2 cup butter
1/2 cup sugar
2 eggs
1 3/4 cup plain flour
1 teaspoon baking powder
1/2 teaspoon soda
1/2 teaspoon salt
1 cup mashed ripe bananas
1/2 cup dried oats

Preheat oven to 350 degrees; melt butter. Cream together sugar and butter; add eggs and beat well. Sift together dry ingredients; add this and banana to creamed mixture. Stir in oats.
Pour into well-greased 9x5x3-inch loaf pan. Bake for 45 to 50 minutes or till done. Remove from pan and let cool.
Store in aluminum foil.

If you DO have nuts and want to use them instead, the recipes are basically the same, but here’s the one I posted last Fall for the traditional Banana Nut Bread.
