Tasty Tuesday: Mexican Rice for Two


I love rice. It goes with almost any meal and is simple, yummy, and filling. This is the recipe I’ve been using, which makes plenty for two people, (plus a little extra, but that also depends on the day and the appetite).

For a full recipe, simply double this one.

Recipe for two:

2 T. olive oil
1/8 med. onion, chopped
1/2-3/4 c. rice
1/2 tsp. garlic powder (optional)
1 1/4 c. chicken broth
1/2 c. plain tomato sauce
2 (heaping) T. finely chopped parsley (optional, but this makes it taste way better)

Heat your oil and add your onion; saute for 1-2 minutes till softened. Add dry rice and garlic powder and cook with onions about 5 minutes, till rice is starting to brown. Add broth and tomato sauce and parsley; bring to boil. Once it begins to boil, turn heat to low and cover. Let simmer for 20 minutes or until rice is soft, fluffing with fork.
