Tasty Tuesday: Squash Casserole


Today’s recipe, squash casserole, is a favorite in my family. This one is my grandmother’s recipe, and is especially delicious. I used to hate squash, but it sends a scrumptious aroma through Mawmaw’s house every time she bakes it, so after trying a little bit every time, I eventually acquired the taste for it and now it is my favorite thing to eat (second to sour cream and tortilla chips, of course).

Here’s what you’ll need:

1 quart yummy, yellow squash
1 medium onion
1 stick butter
1 cup grated cheese
2 eggs
1/2 cup sour cream
Nature’s Seasons to taste (salt, pepper, garlic, etc. mixture)
2 sleeves of crackers (1 for mix; 1 for crust)

Combine everything in baking dish except 1 pack of crackers. Crush the remaining pack of crackers and sprinkle on top. Bake at 350 degrees for about 30 minutes.
