Tasty Tuesday: Red and Yellow Chowder

This one is quite delicious, and extremely simple to throw together!

Red and Yellow Chowder

1 tablespoon olive oil
2 tablespoons butter
1 large onion, chopped
2 tablespoons flour
3 cans chicken broth
1 small red bell pepper, chopped
2 potatoes, peeled and chopped
4 cups frozen corn
Salt and pepper to taste
1 cup half and half

In soup pot, add oil and butter over medium-high heat. When butter is melted, add onion and cook till clear, 3 minutes. Add bell pepper and cook another 3 minutes. Sprinkle flour over it and cook, stirring continually, for another 3 minutes.
Add broth and potatoes and bring to a boil. Cover and cook for about 5 minutes, then uncover and allow potatoes to finish cooking another 5 minutes.
Add corn, salt, pepper, and half and half, cooking over low heat for about 5 minutes, stirring as necessary. When nice and hot and corn is tender, serve. Serves 6.
