Tasty Tuesday: Garlic Lime Chicken

I meant to post a recipe this morning, but things got in the way and I haven’t gotten around to it until now. But as they say, “better late than never,” right?

Here is today’s very yummy recipe! It’s one of my husband’s favorite, and is SO SO easy to make, taking only a few minutes if you have your chicken breasts or tenders already thawed.

Garlic Lime Chicken

1 teaspoon salt
3/4 teaspoon pepper
1/4 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon thyme
6 boneless, skinless chicken breast halves/chicken fingers
2 tablespoons butter
2 tablespoons olive oil
4 tablespoons lime juice
1/2 cup chicken broth

Mix together first seven ingredients. Sprinkle on both sides of chicken breasts. In a skillet heat butter and olive oil over medium-high. Saute chicken until golden brown about 5 minutes on each side. Remove chicken and add lime juice and chicken broth to pan. whisking up brown bits off bottom of pan. Cook till sauce has reduced slightly. Add chicken back to pan to thoroughly coat and serve. Serves 6.

  1. Courtney, is this enough cooking for the chicken? All I see is five minutes on each side, is that for small fingers? Sounds really good, I will give it a try, thanks.
