Tasty Tuesday: Easy Creamy Tomato Pasta

We’ve only been married a little over two months, but after preparing meals for two people nearly every day, my favorite recipe –so far– that I’ve tried for the two of us is Easy Creamy Tomato Pasta. It’s kind of a twist on spaghetti and tomato soup, and it’s really easy and yummy. I’ve made it twice, and we like it a lot. (And since it has sour cream in it, I really like it a lot!)

What you’ll need:
2 T. butter
1 onion, chopped
1 small red or green bell pepper, chopped
1 lb. penne pasta (or any type of pasta you have will work)
1/4 lb. sausage
1 lb. spaghetti sauce
1 c. sour cream

Over medium-high heat, melt butter and saute onion and pepper. Meanwhile, heat water for pasta. Add sausage to onion mixture and continue to cook till sausage is crumbled and well done; drain fat.
Drain water from pasta and add sauce; heat through and add sausage mixture and sour cream. Cook till heated through, about 5 minutes.

There you have it!

Note: Best if served with garlic bread and/or a fresh salad.
